Fried Chicken and Salad with Onion and Mushroom

This is an original recipe as far as I know. A craving for chicken and a need to use up vegetables in the refrigerator gave birth to this dish with a little insight from my girlfriend dressing-wise. It`s inexpensive, fairly straight forward and should make for a good summer meal. Living in Japan, this meal was naturally complimented with rice but should go well with virtually anything.

How to make “Fried Chicken and Salad with Onion and Mushroom”

Ingredients

  • 2 pieces of chicken breast
  • Tomato
  • Lettuce
  • 1/2 onion
  • Mushrooms
  • 1 desert spoon vinegar
  • 1 desert spoon olive oil
  • Fresh garlic paste
  • Salt and pepper

Method

  1. Peel and cut the onion and fry in a frying pan with mushrooms and a little butter on medium heat.  Once cooked, place the onion and mushrooms on plates.
  2. Remove any chicken skin and fry the chicken breast again on medium heat in the same frying pan, sprinkling a little salt and pepper over the top.
  3. While the chicken is frying, mix a small amount of garlic, olive oil and vinegar together in a bowl.
  4. Chop the tomato and tear the lettuce into small pieces.  Gently mix the tomato and lettuce with the contents of the bowl.
  5. Once the chicken is properly cooked, place the breasts on top of the onion and mushroom and place the salad on top. Serves 2.
