Gajrela

Gajrela is a sweet dish made from carrots, milk ans sugar.  It`s a very popular dish in Northern India during the winters and is sometimes referred to as “Gajar ka Halwa” in some regions.  This Indian dish was passed onto me by a guest blogger and you can visit her blog here.

Ingredients

  • 1 kg carrots, washed, peeled and grated
  • 1 litre milk
  • 2 tablespoons ghee or butter
  • 1 cup sugar
  • 2 tablespoons chopped cashew nuts and raisins (optional)

Method

  1. In a heavy bottomed pan, add ghee or butter.  Add the grated carrots and roast for a minute.
  2. Add the milk and mix well.  Lower the heat and let it cook for about an hour or until the milk is mostly dried up.
  3. Add the sugar and cook on high heat, stirring vigorously.  Cook until all the separate liquid is evaporated.
  4. Add nuts and raisins at the end if desired.  They can also be used for garnishing.  This picture also has stripes of dessicated coconut on top which you may like to add.  Serves 8.
