Sweet Potato and Apple Salad

In Australia I don`t think I can ever recall seeing a sweet potato actually, which is why the first time I ever saw this recipe was right here in Japan. I`m not exactly sure how common sweet potatoes are elsewhere in the world, but Japan seems to have quite a lot, maybe as much as regular potatoes. Who knows? Anyway, this is a very quick and easy to make salad which I like to compliment my dinner with quite frequently. Give it a try.
Ingredients
- 1 sweet potato
- 1/2 a large apple
- Raisins
- Mayonnaise
Method
- Wash and cut the sweet potato into bite-sized chucks by first cutting length ways along the center and then across it. Boil on high for about 3 or 4 minutes, or until you can easily insert a chopstick into the potato without it crumbling apart.
- While the sweet potato is boiling, wash and cut the apple into similar sized chunks and place into a large mixing bowl. Once the sweet potato is ready, add the pieces into the bowl with the apple.
- Add 2 or 3 spoonfuls of mayonnaise, whatever you feel is appropriate because it will depend on your taste and the flavor of your mayonnaise. Personally, I like to use Kraft light and tangy mayonnaise but any is fine really.
- Finally, add a few raisins to the bowl, mix gently and serve. Serves 2 or 3.
